Mario Sandoval, Haroma’s gastronomic advisor, recovers iconic dishes from the traditional Spanish cuisine and imbues them with his personal touch. Using these recipes as a starting point, with a meticulously elaborative approach, and raw materials of the highest quality, the Michelin star chef creates an experience in which the tastes and aromas of the ingredients envelop the diner.
The Madrid born chef considers sustainability a crucial element of every plate. He exclusively works with ecological, seasonal, and local produce that makes short routes between its origin and destination, reducing carbon emissions and working towards building an ethical and ecologically conscious cuisine.
Sandoval’s
