Miguel Carretero, originally from Pedro Muñoz (Ciudad Real), opened Santerra in 2017 in the Salamanca district of Madrid. His cuisine, which combines quality produce and technique, changes according to the season, fusing the traditional with a contemporary touch. He has been awarded a Michelin Star 2024, has won the award for the "Best Croquette in the World" at Madrid Fusión 2018, and has reaffirmed this title in 2022. He has also won the National Pickled Food Competition at Madrid Fusión 2020 and has had a Sol Repsol since 2021.
