In 2013, Paco Quirós and Carlos Crespo Viadero, both from Santander, joined forces to create a concept based on simplicity, quality and consistency, in the style of Grupo Cañadío. Their business model is distinguished by offering a recognizable offering focused on a good product. Crespo highlights the importance of the kitchen team and honesty in their work: "We are chefs, we tell the truth, not what the public wants to hear."
